Pathos – The IPA
The (not so) humble IPA is a real tricky beer to make. Don’t get me wrong, brewing an IPA from an existing recipe can be done, but trying to develop your own recipe is a real challenge, even more than other styles of beer. Hoppy, but not too hoppy, malty, but not too sweet, dry but not too thin. All these are tough challenges.
This beer represent a tribute to a commercial beer, Tallgrass Brewing’s recently retired Ethos. From their website you can find out the hops and some of the malt used and from there the process starts.
After that it’s just a matter of calculating the grist and hop schedule. This recipe has several addition including a big whirlpool and even bigger dry-hop
Appearance This beer came out a lovely orange with a pleasant pillowy head. Quite a bit of haze probably from all the hops
Aroma Hop, Hop and more Hops. As there are a lot of hops in here it’s no surprise that you can smell them. Resin, Pine, Grapefruit and Orange.
Flavor Too sweet. While the bitterness is good on this one, it’s got a little too much sweetness in the finish.
Overall Drinkability This beer was OK. It was the first brew of a recipe that I will continue to work on. The hops are there and provide a real full flavor but the sweetness realy thrown it off.
When I re-brew this recipe I will make 2 major changes. First I till lower the mash temp to get a drier and less sweet beer. The second is I will cut down, slightly, the dry-hop. While I don’t mind a hazy beer, I think that the massive amount of hops that resulted in early oxidation of the beer. Next time it will be better.
